Stuffed Caribe w/Chèvre Goat Cheese, Crab, Roasted Bell Pepper, Diced Tomato and Green Chillie Filling
Dessert:
Aztec Cacao (Spiced Cocoa Drink)

I am full, and when I say full I mean F-U-L-L, FULL! The stuffed Bell Peppers came out tender & real tasty and the extra kick from the Stuffed Caribe Chillies had a couple of our members reaching for their glasses to put out the fire on their tongues. This recipe was the first one I hadn’t fully tested before our meeting & I am very happy with then final result- better than I could have hoped for. By the end of the night all of us were so packed with food, that we didn’t actually taste the Xingu, I just handed out bottles to everyone and said; “Take this home and let everyone know what you think.”

*Tim Andrews for opening up his family’s home at the last minute to host our rowdy bunch of characters. Has anyone ever seen a hairless cat? Until this meeting I had only seen one on TV and in film, but seeing one up close gave me pause. Wow, that’s cool- ugly little beast- but real cool!
*Terry Carmer for bringing his homemade Salsa and Guacamole. With how good they both where I think that mabe Terry might have some Latin heritage he didn’t know about. ;)

When trying to come up with a theme for next month, I thought what better way to enjoy the middle of summer that with an old fashioned picnic- So for our July meeting we are going outdoors people!
